Ginataang Bilo-Bilo (Sticky Rice Balls in Coconut Milk)

Ginataang Bilo-Bilo or Sticky Rice Balls in Coconut Milk is a popular dessert/merienda in the Philippines. In our province (Quezon), we also call it as “Pinaltok”. This is very easy to cook, here’s how:

1 cup Sago

2 cups Gata (Coconut Milk)

2 cups Water

3 cups Glutinous Rice + 1 1/2 cups Water (Form into Rice Balls)

1 Sweet Potato (cubed)

3 Saba (Plantain) (cubed)

1 cup Langka (Jackfruit)

1 cup Sugar

1- Prepare the rice balls by combining glutinous rice and water until a dough is formed.

2- Shape the dough into small balls. Set aside.

3- In a large pot, combine 1 cup of coconut milk and water. Stir occasionally.

4- Upon boiling, drop the rice balls.

5- When the dough starts to float, add the sweet potatoes and wait until half-cooked.

6- Add the bananas/plantain and cook for 5 minutes.

7- Add the langka/jackfruit, 1 cup coconut milk, sago and sugar.

8- Cook for another 5 minutes or until sauce is thick.

9- Best served when hot.

Enjoy! 🙂
