Cassava cake is one of the most popular delicacies/kakanin here in the Philippines. In Lucena, a city in Quezon Province, we call it as BUDIN.
1 1/2 cups cassava, grated
2/3 cup condensed milk
2 eggs, beaten
1/4 cup sugar
2 tbsp butter, melted
cheddar cheese, grated (optional for toppings)
*Follow the above ratio when adding more servings.
1. Prepare your steamer (pre-heat/start boiling the water).
2. In a large bowl, combine all ingredients. Mix evenly.
3. Pour the batter in a buttered baking pan and steam/cook for about 40mins to 1hr.
4. When it’s already cooked, remove from steamer and let it cool for some time. Then, spread grated cheddar cheese on top.
