Head of the Family: Not Just a Provider but a Father

Imagine working in a world where time seems to just past by and where almost everything changes instantly. Think of having to keep up with an environment where it costs a lot to stop or even slow down for a while. Sound taxing, right? What more of prioritizing the welfare of everybody in the household on top of it all.

 

But every head of the family doesn’t mind about it. Fathers are said to be the pillars of our homes. They toil sun up to sun down to give our needs and desires.

 

Some of them go abroad with tears in their eyes because they will be physically separated from their families. However, there is a certain joy in their hearts knowing that they will be able to provide for their loved ones back home.

 

To honor these gallant paternal men and let them feel how extraordinary they are and important their sacrifices are for their families, Father’s Day has been a yearly universal event. As we mark again this special occasion on Sunday, June 18, 2017, our applause and recognition will never be enough to show them how grateful we are to have them in our lives.

 

Our dads, together with our moms, take good care of us the moment we’re born. They are the ones who provide everything we need for our everyday lives. From infancy up to adulthood, they feed and clothe us.

 

As we take our initial baby steps, our patriarchs guide and lead us in the right direction. When we stumble and fall, they assist us to rise and move on. In times of danger or any threat, they shield us from any harm.

 

All of these, they do out of unconditional love. Their selflessness, though, has its own toll. Working tirelessly could lead to high levels of stress constantly and problems not only mentally, but physically, too. So better watch out for the signs.

Ever Bilena partners with Hope for Lupus Foundation

They say, parents can decide whether to send their children (esp. those in preschools and lower levels) to school when there’s a heavy down pour of rain. But when you know that exams’ week is coming, it’s really hard to decide. You don’t want your child to be left out of the classes and discussions, which MOST PROBABLY be included in the exams. Why can’t schools just announce whether classes will push through or not?!

#WALANGPASOK | Class Suspensions – August 2, 2017, Philippines

A not so good morning to everyone… Heavy rains and thunderstorms welcomed my morning. When my son woke up, I was not surprised that he did not asked what’s the menu for breakfast but, “May pasok ba, mama?” I thought to myself, “Estudyante na talaga s’ya.” (Hehe!) I would’ve asked that too if I’m still a student. But unfortunately, I replied, “Meron, walang namang announcement si pareng Boying eh.” FYI, Boying Remulla is the governor here in Cavite.

 

But for everyone’s information, some LGUs already announced the suspension of classes. Here’s an update as of 12pm:

The Drama and July 2017 Top Commenter of the Month Winner

Every year, we experience typhoon here in the Philippines. And now, it’s the time of the year when typhoon comes to “visit” us.

 

So, just last week, a typhoon came by which was named as “Gorio”. Classes from pre-school to college were suspended from Wednesday to Friday. Some parents got mad because the announcement of suspension of classes were delayed and most of the students were stranded in going home either because of flood or heavy traffic. Well, good for us that we did not experience this, HOWEVER, there’s another annoying thing that I’ve experienced…

 

Drama #1

On Wednesday, my aunt sent me a text message that our telephone has no dial tone. Our landline is one important communication tool for us because as a working mom, it’s me and my sons’ way to get in touch with each other. Our family members’ mobile numbers are stored in our telephone so that they can just press each number on whom my kids want to call or talk with, especially during “emergencies”. And, without dial tone, how can we communicate AT ANY MOMENT that we or they wanted to? They cannot borrow my aunt’s mobile anytime ‘coz she’s also using it and another thing is that, they are not allowed to because they often accidentally deletes either contacts or important messages. You know, KIDS!

 

So, I called our service provider’s customer service. I guess it took around 8-10 minutes before I get hold to talk to a CSR. I was hoping for a tech visit within the day but the schedule given was Friday. OKAY, looks like I don’t have a choice!

 

On Thursday, my aunt told me that the technician came and our telephone’s dial tone issue get fixed. Cool!

 

Drama #2

On Friday, I wasn’t able to go to office (also as advised by our HR) because of the strong typhoon and the wind was so mad too! And the bad thing? The dial tone went off again and this time also our INTERNET CONNECTION! Geez-a-whiz!!! That can’t be! How can I work from home if we don’t have internet service? Screwed! So, I called our service provider’s customer service AGAIN. But this time, it took 15-20 minutes before I get hold of a CSR. After some basic troubleshooting, my problem wasn’t fixed. He scheduled a tech visit for me. I asked him if it can be scheduled within the day ‘coz I badly needed to work, and he said yes.

 

I waited forever, no technician came.

 

How was I able to work? I stole a portion of our neighbor’s WIFI connection. (THIS IS NOT HIGHLY RECOMMENDED, LEARN TO ASK.) And yes, I’m just pretty much lucky that their WIFI is not password protected. I barely got internet service (in and out) being sooo close to my room’s window which is the nearest place I can setup to “get” connected. I “somehow” survived.

 

Drama #3

Saturday came, this is the day that you, my readers, are waiting for. Announcement of my giveaway winner! And the drama? My internet connection is not yet fixed and my neighbor’s WIFI is out. What’s left for me is my mobile which is only has a FREE Facebook access. Poor me!

 

And for one more time, I called for a technician. As the CSR checked my account, I’ve found out that the scheduled tech visit that was given to me isn’t last Friday but Monday! That’s insane! Giving false information to your subscribers isn’t just acceptable! And yes, of course, I was MAD. Who wouldn’t be? Then, as a resolution, tech visit was moved to Sunday. Okay, fine. It’s the earliest schedule that the CSR could give me.

 

I don’t have a choice but to send out an announcement on my Facebook page that the announcement will get delayed. (Really sorry guys!)

 

Sunday came, internet connection was finally fixed! But since it’s a family day, I spent the whole day with my kids and family, stayed at my mom’s house for almost the whole day after going to mass.

#Recipe of the Day: Boeuf Bourguignon

 

Last Saturday, I had the privilege to watch (LIVE!) the cooking demo of Chef Xavier Btesh, at the Maya Kitchen Culinary Arts Center in Makati.

 

Chef Xavier was born and raised in Paris and spent the earlier part of his career training under renowned chefs before he went on to become a consultant chef for various businesses and eventually published his own cookbook Les Petits Diners de Xavier which sold more than 40,000 copies across Europe.

 

When you’re a French chef, people come to you and they tell you about 3-star, 4-star Michelin chefs, truffles, and foie gras. But I keep telling people, this is not the food we eat daily,” he says. “I know that Filipinos love their family-style and we’re the same in France, we have family-style as well. I want to show the way we eat at home.”

 

Now, I’m sharing with you one of the recipes he taught us during the cooking demo. It’s called:

 

Boeuf Bourguignon

 

According to Chef Xavier, this is similar to our “adobo” but a French version. Just switch the vinegar with wine and there you’ll have a French stew.

 

What you’ll need:

2 mugs beef chunks

1 pc onion

1 pc garlic clove, peeled

1 tsp tomato paste

4 pcs button mushrooms or 2 pcs Portobello mushrooms

2 pcs carrots, peeled and sliced

1 espresso cup bacon chunks

1 ½ mugs beef broth

2 tsps white flour

1 tsp dried/fresh thyme

1 pinch clove powder

2 mugs GOOD red wine

salt and pepper to taste

½ espresso cup butter, melted

 

Instructions:

 

Set a frying pan on med-high heat. Place in half your butter, and saute your onions and bacon. When onions turn translucent, transfer onion and bacon to a cast iron pan on high heat along with the rest of the butter. Add the chunks of the meat and toss well. Sprinkle flour, and stir, making sure to scrape the bottom of the pan with a wooden spoon. Add the beef broth, wine, and all the other ingredients except the mushrooms. Mix well. Reduce to a very low heat and cook for 3 hours, stirring every once in a while so that your ingredients won’t stick to the bottom of the pan. After 2 ½ hours, add your mushrooms. If the sauce reduces too much, add a bit of wine or broth. After 3 hours, your iconic French stew will be ready!
