#Recipe of the Day: Leftover Pancake Sandwich

Our family loves pancakes so much! However, sometimes (or most of the times), we overly estimate the quantity of pancakes to cook for everyone’s consumption. So, we tend to have left over pancakes. But we all know that pancakes isn’t good to eat anymore if it’s not hot or newly cooked, right? So here’s one good idea to avoid throwing leftover pancakes.

Why not make a pancake sandwich out of the leftover pancakes?! Nice? 🙂

 

You may put your leftover pancakes in a zip-lock, place it in refrigerator and prepare the pancake sandwich for your family as an afternoon snack or breakfast for the following day.

 

What you’ll need:

  • 2 pancakes
  • 1 egg
  • cooking oil
  • 1 sliced ham
  • 1 slice of cheddar cheese
  • maple syrup

 

Let’s get started!

  1. Heat frying pan over medium heat and put cooking oil.
  2. Fry/Warm the ham in the pan. Followed by the egg. Set aside.
  3. Toast the pancake in the toaster or oven.
  4. Assemble the pancake sandwich and put maple syrup before placing the top pancake piece.
  5. Serve and enjoy!

 

No more leftover pancakes! 🙂

#Recipe of the Day: LOMI

Today’s recipe for this coooold weather is…

LOMI

Pansit lomi or lomi noodles is made of fresh egg noodle. It’s thick and color yellow. This is usually eaten during breakfast or afternoon snack time or merienda.

 

What you’ll need:

1/4 kilo lomi noodles
1/2 cup pork (sliced into strips)
1/2 cup sliced kikiam
1/4 cup meatballs
1 large onion, chopped
3-4 cloves garlic, crushed
6-7 cups chicken or meat broth
2 tbsp. cooking oil
1 tbsp. cornstarch dissolved in water
2 raw eggs
salt to taste

 

Let’s get started!

  1. Saute garlic and onion.
  2. When brown, add pork strips, kikiam, and meatballs.
  3. Add patis; stir for 2 minutes.
  4. Add 1/2 cup water, cover and simmer until water is almost dry.
  5. Add broth.
  6. Cover and let boil for 10 minutes.
  7. Drop in noodles. Let boil for 3 minutes and thicken with dissolved cornstarch.
  8. Beat eggs and stir in. Do not boil. Serve at once.
